  1. Soak 60g almonds in warm water for 2 hours in advance, put them into a blender with 200ml water and beat them into pulp, then filter them with gauze to make almond juice without impurities;

  2. Mix 10g gelatine powder and appropriate amount of cold water, pour them into the pot, then pour in almond juice and 250ml whole milk or coconut milk, add appropriate amount of rock sugar and cook over low heat until melted, stir evenly.

  3. Prepare a container, put gauze on the bottom of the container, pour in the cooked almond milk liquid, and fully filter out the bubbles and floating residue.

  4. After letting it cool, add the stewed bird's nest and refrigerate for 2 hours to form.

  5. Take it out, turn it upside down, cut it into small pieces and put it in a bowl.
