  3. Add oil to the pot, sauté onions, ginger and garlic until fragrant, add potatoes, curry, salt and pepper and stir-fry.

  4. When the fried potatoes start to thicken, add coconut milk, stir-fry for a while, add red pepper, add coconut milk and simmer for a while. Keep stirring during this period.
