Cut the chicken in the middle {this makes it easier to taste}, add the ingredients: ginger and green onion, cut into fine pieces (not too finely chopped), then add the seasonings: white pepper, salt and pepper, sugar, white wine, light soy sauce, peanut oil, and use your hands to mix well until every piece of chicken is flavorful.

Wrap the submerged chicken in plastic wrap and put it in the refrigerator for 2 hours (for better flavor)

Try to remove the ginger and scallion velvet so that the chicken does not stick (why? Because it will stick to the pan). Heat a pan, add a little oil and fry the chicken until golden brown on both sides. After frying for a certain period of time (about 8 minutes), add dark soy sauce, light soy sauce and black pepper powder and stir-fry evenly to ensure that every piece of chicken has black pepper sticking to it. Add some oil and sesame oil and put it on a plate.
