Steps
-
Choose fresh pork belly so that no green color appears
-
Rinse it with water several times, add flour and salt, and constantly rub the inside and outside of the pork belly. The yellow areas inside must be scraped clean, as these are bacterial and virus carriers. The pork belly I bought this time only had a very small part of it yellow, so I cut it off.
-
Repeat the above steps three times or more until there is no more mucus on the surface. Then soak with a little vinegar for ten minutes. At this point, heat up a small pot of water.
-
Add ginger slices and scallions into the pot until small blisters begin to form. Add the pork belly and stir frequently.
-
As the water boils, floating powder will continue to appear.
-
Wash off the scum on the pork belly. If there is any white mucous membrane, remove it, and then soak it in vinegar for a while.
-
Wash the pork belly and cut it into small strips, then wash it a few times. You will find that the water becomes clearer and clearer, and it will be ready after about three times. At this point, the pork belly has been processed cleanly. These steps are very important. If the pork belly is used for stir-frying, it is best to press it in a pressure cooker for a period of time before cutting it into strips; if it is to be stewed, this step is not required.
