Soak the rice noodles in water until soft.

Wash the lettuce and cut into small pieces.

Add rice noodles to the soup pot and bring to a boil.

Add lettuce and cook together.

Put the chili oil, salt, lard, vinegar and dark soy sauce in a large bowl, then add an appropriate amount of boiling water and stir evenly.

Bring water to a boil.

Put the vermicelli and lettuce into the soup base you just prepared.

Leave a little cooking water, add the peeled crayfish meat and bring to a boil. Season with appropriate amount of salt and chili oil.

Wash coriander leaves and set aside.

Pour the crayfish meat over the cooked vermicelli.

Sprinkle with coriander leaves.

Stir well and serve.
