Wash, peel and cut sweet potatoes into cubes

Add oil (you can estimate the amount of oil by yourself. If you want to fry it once, it is best to fry sweet potatoes. You can also fry it in two or more times with less oil) and heat it up.

Put the sweet potato cubes into the oil and fry over medium heat

Use chopsticks to stir during the frying process to fry evenly and avoid sticking to the pan

Fry until browned and crispy, control oil and remove

Fry the sugar color, heat the pot, add more oil than stir-fry, add sugar (3 spoons, the size of a restaurant porcelain spoon), pour half a small bowl of water, fry the oil and water until it becomes bright

Fry the sugar color over medium heat, turning constantly. In the early stage, there will be big white bubbles

In the middle stage, the bubbles become smaller and fewer, and the color becomes darker and brighter.

Continue stirring until the color turns dark brown and the bubbles become smaller and brighter

Remove the pot from the heat, pour the oil-controlled sweet potatoes into the pot and stir-fry quickly

Grease the bottom of the plate to prevent it from sticking. Remove the sweet potatoes and serve on a plate
