Grilled winter melon
Overview

Fresh winter melon purchased at the supermarket or market.

Peel off the outer skin of the winter melon, hollow out the seeds in the middle, wash and cut the winter melon into segments about 5 cm wide with a knife.

In order to make it easier for the winter melon to burn through and absorb the flavor, do some flower cutting. Cut a section of winter melon lengthwise from the peeling point into several 1 cm wide slits. Be careful not to cut each cut, so it will still look like a whole piece of winter melon.

Turn the cut winter melon segments over again.

Continue to repeat step 3 to make the flower knife form a field grid twice.

Heat the pan and pour in appropriate amount of salad oil.

After the oil is 80% hot, place the peeled side of the winter melon evenly against the inner wall of the pot.

Flip the bottom of the winter melon until golden brown.

Cook until several sides of the winter melon are golden brown and the color changes from white to transparent.

Add minced garlic.

Pour on appropriate amount of cooking wine.

Sprinkle with appropriate amount of table salt.

Drizzle with appropriate amount of dark soy sauce for color.

Sprinkle some black pepper.

Finally, pour an appropriate amount of water, cover the pot and simmer for a while.

When the juice of the winter melon is almost gone, it can be taken out of the pot.
