Overview
When I first started baking, I really imitated everyone's work in a serious way. Over this period of time, I found that I have changed and become less rigid. After mastering the basic skills, I dared to incorporate my own ideas. For example, when making this toast, I really thought of it as a small steamed bun. I made whatever skin I wanted and used any fillings I liked, so the finished product became the toast that best suits my taste!

Prepare all the materials

Pour water, whole egg liquid, salt, sugar, high flour and cake flour into a large bowl in sequence

Then add yeast (do this to avoid salt from killing the yeast), stir it into granules with chopsticks, and then knead the dough with your hands (butter has not been added at this time)

Knead the dough until it is smooth, cover it with plastic wrap and allow the ingredients to fully blend. Knead again after ten minutes

During the kneading process, you can add water to adjust according to the softness and hardness of the dough (as shown in the picture, wet your hands with water before kneading to prevent adding too much water. Add water as appropriate according to the actual situation. The water added in this process is not within the 125 grams of water content in the formula)

First rub it for a while, then beat it for a while (be patient) and take out a piece

Continue rubbing and beating until you can pull out this tough, transparent film

The so-called 'glove film' in the baking industry, even if it is pulled hard, the broken edge will be smooth and not frizzy at all

At this time, divide the kneaded dough into four equal parts, cover with plastic wrap and let it rest for 5 minutes. Then knead two of the doughs into matcha powder and cocoa powder respectively (if the dough is dry and difficult to knead, you can dip your hands in water and knead until the color is uniform)

Put all four doughs into the container (leave a certain distance between them), seal it with plastic wrap and place it on the grill. Place a bowl of hot water under the shelf to maintain the humidity in the oven. Close the oven door and seal it for fermentation

For about 40 minutes, you can use your fingers to dip your fingers in flour and poke small holes in the dough, as shown in the picture. If it does not spring back, it means it is fermented just right (if the hole rebounds, it means it has not risen enough. If you poke it, it will collapse with the surrounding area of the hole, it means it is over-fermented)

The fermented dough will look 2 to 3 times its original size. Take it out and knead it separately to release the air in the dough, that is, to exhaust the air and knead until soft. Then cover it with a protective film and let it rest for 15 minutes

Take the matcha dough and roll it into a square shape (as shown in the picture, the roll should be slightly shorter than the length of the mold to make it easier to put into the mold), roll it up from top to bottom, seal it and put it in the toast box

Take another piece of white dough and proceed as above, except roll dried cranberries into it

Cover with plastic wrap and ferment for the last time until the toast box is 80% full
