Overview

  11. At this time, divide the kneaded dough into four equal parts, cover with plastic wrap and let it rest for 5 minutes. Then knead two of the doughs into matcha powder and cocoa powder respectively (if the dough is dry and difficult to knead, you can dip your hands in water and knead until the color is uniform)

  12. Put all four doughs into the container (leave a certain distance between them), seal it with plastic wrap and place it on the grill. Place a bowl of hot water under the shelf to maintain the humidity in the oven. Close the oven door and seal it for fermentation

  13. For about 40 minutes, you can use your fingers to dip your fingers in flour and poke small holes in the dough, as shown in the picture. If it does not spring back, it means it is fermented just right (if the hole rebounds, it means it has not risen enough.   14. The fermented dough will look 2 to 3 times its original size. Take it out and knead it separately to release the air in the dough, that is, to exhaust the air and knead until soft. Then cover it with a protective film and let it rest for 15 minutes
