Overview
Following the previous article about biscuits, this time I used a smart oven to experiment with bread. Facts have proved that the new oven heats evenly and the bread can be stringy and soft. The capacity of this oven is not very large, but it is more than enough to bake breakfast buns and the like. You don’t need an oven above 30L. This oven only has a capacity of 25L, but it can still bake bread very well because of its accurate temperature and even heating. The surface is decorated with pistachios, you can substitute them if you like other nuts.

Knead all ingredients except butter and raisins into a smooth dough

Add butter and knead until expanded

Add raisins, knead well, and perform basic fermentation for 1 hour.

Divide the fermented dough into 8 equal portions, each portion is about 65 grams.

Shape the small dough into a twist shape.

Put it in the oven, start the fermentation function, 40 degrees, 30 minutes.

Brush the surface of the fermented dough with egg wash, sprinkle with nuts, and put it into the preheated oven again, 180 degrees, with upper and lower heat for 15 minutes.
