This recipe amount corresponds to the Le Kui brownie mold. I failed with a Lekui mold, which is easier to remove from the mold and avoid cutting into pieces. I feel sorry for my expensive Valrhona Caribbean. Haha, in fact, it is the same with any mold, just don’t make it too thick and it will not bake through. Secondly, let it cool and put it in the refrigerator before cutting. This thing is easy to break. The original recipe is Jun's version, which is easy to understand and easy to operate. I reduced the sugar, and added 15 grams of sugar if it is for children. I used Valrhona Caribbean (66%) for chocolate. If the chocolate you use has a different content, add or subtract sugar appropriately.
