Homemade Yellow Bone Fish Braised Tofu
Overview
After eating this dish for the first time in a Hakka restaurant, I couldn't forget it. I like the tenderness of the yellow-bone fish, and I also like the flavor of the tofu after absorbing the simmering juice. Later, I learned that yellow bone fish has high nutritional value and can nourish and warm the stomach, so this dish often appeared in our restaurant!

Wash and cut the yellow bone fish, then place it on a plate and set aside.

Shred the ginger and cut the green onion into sections and set aside. Wash the old tofu and set aside.

Cut the old tofu into cubes and set aside.

Heat the pan, about 60% hot, and add an appropriate amount of oil.

Put the yellow-bone fish into a hot pan, fry lightly on both sides for 1 minute on medium-low heat, remove and set aside.

Add shredded ginger and scallions into the pot and sauté until fragrant.

Add the fried yellow bone fish.

Add an appropriate amount of light soy sauce and a few drops of dark soy sauce.

Add old tofu cubes.

Add water covering three-quarters of the fish body and turn to high heat.

After the fire comes to a boil, turn to medium heat and simmer for twenty minutes.

Add appropriate amount of cooking wine.

Prepare a little water starch.

Add evenly into the pot, stir-fry gently over high heat for 1 minute.

Remove from the pot, place on a plate, and garnish with scallions and blanched carrots.
