Overview
The private shrimp baking box is based on my many years of pasta experience. When making leek, egg and shrimp filling, don’t add too many seasonings to avoid taking away the aroma of the raw materials. Leeks are hot, so don’t add seasonings such as pepper. You can add sesame oil or not. The seasoning is very simple. Check it out if you like:

Mix the noodles according to the ratio of one pound of noodles to six ounces of water. Use 80-degree water. If you don't control the temperature well, let the water boil for 5 minutes or when the kettle starts to make a sound of water (sounding water) when kneading the noodles, never use boiling water to scald the noodles directly.

After making the dough, let it rest in a plastic bag in a warm place for 20 minutes

Prepare filling ingredients

Be sure to add more oil to the pot

For eggs, add a few drops of water (tender), stir well, heat oil over high heat and quickly break into pieces until medium cooked. Then let it cool

Add the eggs, together with the oil in the pot, to the chopped leeks, and add 2 drops of sesame oil.

Remove the shrimp lines from the shrimps, marinate them in cooking wine for 20 minutes, then drain them and set aside

When filling, add shrimp and salt to avoid water leakage.
