Stir-fried shredded carrots with loofah
Overview
A colleague sent me a large loofah that I grew myself. It was so big that I ate it several times before finishing it. I like it served cold. This time it is stir-fried. It goes well with carrots. It is colorful and makes you appetizing.

Wash and shred the carrots, shred the onions, and mince the garlic

Wash and remove the flesh from the loofah, steam it in a pot, use chopsticks to gently poke it in the middle, and the whole circle of silk will fall off

Loofah shreds for later use

Heat oil in a wok and sauté peppercorns

Sauté shredded onions, add shredded carrots and stir-fry

Add shredded loofah and stir-fry

Add minced garlic and salt to taste
