Hot and sour potato shreds
Overview

Ingredients: potatoes, dried chili peppers, ginger, garlic.

Condiments: vegetable oil, cold vinegar, salt, pepper powder.

Cut the dried chili peppers and ginger into shreds, and cut the garlic into minced garlic and set aside.

Peel the potatoes and cut them into thin shreds. Place the shredded potatoes in a container and rinse them twice with water to wash away the excess starch.

Pour appropriate amount of vegetable oil into the pot.

When the oil is 50% hot, add dried chili peppers and ginger and stir-fry (the oil temperature should not be too high, otherwise the chili peppers will turn black).

When the dried chili changes color, add the shredded potatoes and stir-fry evenly, then add an appropriate amount of vinegar and continue to stir-fry.
