Select fresh amaranth leaves and clean them.

Cut the amaranth into sections, flatten and chop the garlic cloves.

Add salt, cooking wine, and a little water to the duck eggs and beat into egg liquid.

Heat the oil in a pan, pour in the egg liquid and stir-fry into pieces and serve.

Add additional oil to the pot and sauté the minced garlic over low heat.

Add amaranth and stir-fry over high heat until soft.

Add the scrambled egg cubes, season with salt and oyster sauce and stir well.
