River noodles
Overview
Helao is an ancient Han Chinese noodle variety with a history of more than 1,000 years. It is mostly popular among people in the north, especially in Shanxi and northern Shaanxi. It has different names in different places. Some are called Helao noodles, some are called bed noodles, some are called Liao noodles, and some are called Yahelao or Gahelao. River noodles are harder than fish noodles and softer than shaved noodles. They have a smooth and soft texture, which has its own merits. River noodles have a compact structure, uniform thickness, appropriate length, soft texture and sharp taste. It's delicious pasta.
