Eggplant with minced meat
Overview
The fried eggplant meat will be more fragrant, but because it is evening, less oil is added. But it tastes really good this way.

Cut the eggplant into strips (you can peel off the skin if you don't like to eat it).

Prepare a small piece of meat and cut it into dices; add a little salt, soy sauce and starch. Then mix together.

Prepare two dried chili peppers, cut into sections; three cloves of garlic, minced; and a small piece of hot pot seasoning. (If you don’t like spicy food, you can omit the hot pot condiments).

Put lard and peanut oil in the pot; over low heat, add hot pot ingredients, a small spoonful of sugar, and dried chili segments; after stir-frying, add minced meat and stir-fry, then add a small spoonful of chicken essence, salt, and minced garlic. (Always use low heat at this stage so that the oil will not splash easily, the seasoning will not burn, and the fried minced meat will be relatively tender. You can add some soy sauce when stir-frying the minced meat).

After the minced meat is stir-fried, add the eggplant strips and stir-fry; after the minced meat and eggplant strips are fully mixed, add a spoonful of water to prevent the pot from sticking. (Eggplant itself is easy to cook, so you don’t need to use too much water. The fire can be controlled according to the conditions in the pot).

After frying, put it on a plate and garnish with some shredded green onions.
