Braised pork and beans
Overview
This dish is my favorite dish cooked by my mother. I have never made it in all my years. I suddenly thought about it yesterday and I planned to make it right away. When my husband came in, he said that he smelled the aroma of our house right after he walked into the elevator. Hahaha, he was so proud. I gave him a piece of the braised pork after it came out of the pot, which won him lots of praise. After the food was stewed, he kept saying it was delicious and even ate two more bowls of rice😊😊😊

Cut the pork belly into pieces and wash

Soak the dried beans and warm water. Soak the beans as well. I forgot to take a photo

Blanch the pork belly in cold water and remove from the pot five minutes later

Pour the blanched pork belly into cold water and skim off the foam

All seasonings are ready

Add oil to the pot, be sure to add less. Turn the pot around so that the oil covers the walls of the pot

Stir-fry the braised pork over medium-low heat to draw out the fat in the pork belly. This step is very important, it is an important link to ensure that the braised pork is fat but not greasy and the flavor remains on the teeth and cheeks

Stir-fry the pork belly until the oil is released, then put it out. Do not put oil in the pot, just add white sugar and stir-fry the sugar color.

After the sugar is melted, add the pork belly and continue to stir-fry until it browns.

After the meat is colored, pour water into the pot. Wrap all the seasonings in gauze except for the green onion, ginger and rock sugar. Put all the seasonings into the pot. When you first open the pot, add light soy sauce and dark soy sauce, but do not add salt.

After simmering over medium heat for forty minutes, add the soaked and washed dried beans and wide noodles, and add salt.

After simmering for thirty minutes, reduce the juice over high heat. If you want to eat it with soup, bring some soup. If you don't want to eat it with soup, remove the juice. Remove from the pan. Start eating.
