Cut the pork stick bones into pieces, clean them, and soak them in water for two hours if time permits

Add cold water to the pot and add soaked pork ribs

Boil and skim off the blood foam

In another pot, add enough water, add onions, ginger, star anise and bay leaves to boil first, then add the blanched stick bones

Add cooking wine and white vinegar

After boiling over high heat, reduce to low heat and simmer for one hour

Add appropriate amount of salt and simmer over low heat for about 30 minutes
