Blanch the cooked fresh chicken wings in boiling water. When the color changes, take them out and drain the water.

Prepare ingredients: cut green onions into sections, slice ginger; peppercorns, star anise, bay leaves, and dried chili peppers.

Put the base oil in the pot, turn on low heat and add sugar.

After the sugar melts, add the chicken wings and stir-fry.

Turn on high heat, add the ingredients prepared previously, and stir-fry.

Add cooking wine, light soy sauce, and dark soy sauce in sequence, and stir-fry until the chicken wings are all colored.

Pour in boiling water until the water surface is level with the chicken wings. After boiling, turn down the heat and cook for 15 minutes.

Finally, turn to medium heat, collect the juice and serve on a plate.
