Rinse the dried eel and soak it in clean water for more than 1 hour. (Change the water several times to remove the salty taste)

Put the soaked eel back into the water (add 1 tablespoon of white wine and ginger slices to the water) and continue soaking for half an hour (to remove the fishy smell).

Rinse the dried eel and cut into pieces.

Pour appropriate amount of oil into the pot, add ginger slices and garlic slices and saute until fragrant.

Add the eel and stir-fry for a while, then pour in the cooking wine and stir-fry over high heat to release the wine steam.

Add water to cover the eel, add rock sugar and bring to a boil over high heat, then reduce to low heat and simmer covered for about 20 minutes.

Cook until the soup reduces, pour in honey and stir-fry over high heat until the soup dries up.
