Prepare all the ingredients and start cooking. Preheat the oven to 200 degrees Celsius.

Wash potatoes, carrots, onions and apples and cut into small pieces and set aside; chop garlic, rosemary and thyme and set aside.

Marinate potatoes, carrots, onions and diced apples with olive oil, salt and pepper.

Make the marinade by combining the chopped herbs, bell pepper, olive oil, salt, and pepper in a small bowl.

Brush chicken inside and out with marinade and stuff chicken belly with marinated vegetables.

Place the chicken in the roasting pan and arrange the remaining vegetables around the chicken. Place in the preheated oven and bake at 180 degrees Celsius for about 60 minutes.

Remove the tin foil and continue baking at 160 degrees Celsius for about 30 minutes.
