Crispy Red Bean Waffles
Overview
I bought 6 kilograms of red adzuki beans during the Chinese New Year. My mother originally wanted to make cakes for me to eat, but during the Chinese New Year, I traveled to my hometown and stayed at my aunts' and grandma's houses every day. . . This red bean waffle is modeled after Starbucks. It’s an overpriced dessert sold outside, but you can make it at home!

Place flour, baking powder, sugar, salt and baking soda in a bowl, and add frozen butter cubes.

Shape into coarse corn kernels.

Take out 20g for surface decoration.

Pour in the whole egg mixture and milk.

Knead into dough.

Divide into two doughs.

Take a piece of dough and roll it out.

Fold in half twice.

After shaping it into a round shape, continue rolling it out. The same goes for the other piece of dough.

Place the dough sheet underneath, spread the red bean paste you made in the middle, and leave it alone. (I'm lazy, so I put the red beans directly on top after cooking, without grinding them into puree.)

Cover with another piece of dough and pinch the edge tightly.

Place it in the cake mold, or leave it alone. Brush with a layer of milk or whole egg wash.

Sprinkle with red beans or honey beans, crispy flakes and a little grated coconut.

Preheat the oven to 190 degrees and set the upper and lower heat to 180 degrees for 25 minutes.

After baking, you can simmer for a few more minutes.
