Braised Bean Noodles

It’s cold, and if you don’t want to make complicated cooking, just have a simple bowl of braised noodles! Main ingredients, green beans, noodles (wet noodles, pressed by machine, available in vegetable markets)

Pick off both ends of the beans and remove the tendons

Wash and cut into two pieces to a suitable length

Cut green onions into larger slices and finely mince shallots

Slice lean meat (pork belly is best, I only have lean meat in the refrigerator)

Heat the oil and sauté the green onions until fragrant (sauté over low heat, as it will burn easily over high heat)

Add the starch to the meat slices and mix well, add the green onions and stir-fry for a few times until the meat changes color and serve

Heat the pot, add appropriate amount of oil and stir-fry the beans

Cover the pot and simmer for a while, use low heat, no need to add water, use the moisture of the beans to simmer for 6 minutes

Add fried meat slices

Add an appropriate amount of salt, sugar, dark soy sauce, and water just enough to cover the beans (you don’t need too much water to simmer the noodles, just a little bit after simmering, the more water, the more soup)

Spread the noodles

Cover and bring to a boil over high heat, simmer over high heat for 3 minutes, then simmer over medium heat for 7 minutes until cooked and the juice is reduced

Add appropriate amount of chicken essence, add chopped green onion, stir evenly
