Lao Ya Winter Melon Soup

I learned this soup from a friend. Because of the addition of bamboo shoot tips and bacon, the soup is fresh and delicious.

Soak the salted bamboo shoot tips in water in advance to remove the salty taste, wash them, tear them into strips, and cut them into sections.

Wash the bacon and cut into about 6 pieces. Wash the duck and cut into large pieces.

Add water to the pot, add duck pieces, cooking wine and blanch the ginger slices.

Add water to the casserole and bring to a boil, add the blanched duck pieces, bamboo shoots and bacon, add cooking wine and ginger slices, simmer over low heat for about 50 minutes.

Add washed and diced winter melon and simmer until the winter melon is cooked.

Add a little wolfberry and simmer for about 5 minutes.
