Kidney bean and red date bread
Overview
Loving yourself is one of the reasons for cooking delicious food. Foodies who love themselves can only give themselves gifts, haha. When I was cooking bean porridge, I saw kidney beans and suddenly wanted to eat bread made from kidney beans, so I soaked the beans to make stuffing. After a day of preparation, I finally ate bread stuffed with kidney beans and red dates. It felt very satisfying. A piece of bread can make me feel satisfied, haha, I am a very contented person, O(∩_∩)O!

Soak the red kidney beans in water for half a day in advance to soften them, so they will be easily cooked

I cooked it in a pressure cooker for 5 minutes and it was very soft

Crush it with a slotted spoon and keep the soup inside

Put the dried red dates in and soak for about 1 hour, allowing the dried dates to fully absorb the soup inside.

Finally crush it. I wanted to eat a slightly grainy filling, so I didn’t use a food processor. If you like finely chopped beans, you can first crush the cooked beans with a food processor, so the filling will be very fine

Take 300 grams of prepared filling and divide into 6 filling balls

Put all the main ingredients except butter into the bread bucket

Start the dough kneading process, add softened butter after 10 minutes, and continue kneading the dough

Knead the dough to the expansion stage. Different bread machines require different times. I spent about 25 minutes this time

You can pull out the glove film. This film is still a bit thick, so I extended the dough kneading for another 2 minutes

Cover with plastic wrap and ferment until 2-3 times in size

Deflate the fermented dough

Divide into 6 dough pieces, cover with plastic wrap and let rest for 10 minutes

Take a piece of dough and flatten it, wrap it in the filling, and wrap it tightly

Roll it out into a long shape, cut it in the middle, but don’t cut off both ends

Put everything into the baking pan

Spray water into the oven, or put a bowl of hot water underneath, and use the fermentation function to ferment. There must be water vapor, otherwise the skin will dry out and affect the rise of the bread

Ferment until doubled in size, take out the egg wash

Preheat the oven to 180 degrees Celsius and bake for 15 minutes

Toasted bread. There is not a lot of sugar, but with the addition of red dates, it is still sweet enough. It is a healthy and delicious bread.
