Fried fish with chili pepper
Overview
Stir-fried small fish with chili pepper is a famous dish in Xuzhou. I remember that I, a girl who came from afar, fell in love with it the first time I ate it. Later, I learned how to cook it for my parents and my parents also fell in love with it as soon as they ate it! This dish is eaten with Xuzhou’s local pancakes and trendy brands. I chose three types of peppers, large green peppers, line peppers, and Hangzhou peppers. The spiciness level is just right for me. If you like spicy food, you can use Hangzhou pepper. If you can't tolerate spicy food, you can use large green pepper. Wash the dried fish in hot water and drain.

Chop the onion, shred the ginger, mince the garlic (slicing the garlic is also acceptable), chop the pepper and set aside

Heat the pan with cold oil. Use more oil than usual for cooking. When the oil is 70% hot, pour in the small fish and fry for about half a minute

Add onion, ginger and garlic and stir-fry

Stir-fry until fragrant, add chili peppers and continue to stir-fry

Add half a spoonful of light soy sauce, half the amount of light soy sauce, vinegar, an appropriate amount of salt, half a spoonful of sugar (or MSG), add a spoonful of water, and continue to stir-fry. Stir-fry for about a minute or two until the peppers are soft and ready to serve (don’t fry them too dry)
