Clean the fish, cut it with a flower knife on both sides, sprinkle salt on both sides, pour cooking wine and marinate for ten minutes.

Cut the onion, ginger and garlic into small pieces, add to the oil pan and sauté until fragrant.

Add cooking wine, sugar, light soy sauce, dark soy sauce, vinegar, star anise, bay leaves, and dried chili peppers to the pot in sequence. Add boiling water until just enough to cover the fish, and bring to a boil.

Add the fish, bring to a boil, turn to medium-low heat, and cook for 20 minutes.
