Tomato Cod
Overview
Now is the cod season, and the price is not expensive. The cod meat is fresh and tender, with less spines and more meat. It is also very suitable for the elderly and children. I made it tomato-flavored, sour and sweet, and paired it with a plate of green vegetables. It is very appetizing.

Wash the cod, squeeze out the water and cut into 1 thumb-wide pieces.

Put the cod in a basin, add a little salt, cooking wine and white pepper, stir evenly and marinate for 10-15 minutes.

Dip the cod in a little flour, shake off excess flour and set aside.

Put the oil in the wok, reduce the heat to medium-low and add the cod.

Cook the cod until golden brown on both sides.

Finely chop onions, ginger and garlic and set aside.

Reserve tomato sauce.

Leave a little oil in the pot, sauté the onions, ginger and garlic until fragrant, add the tomato paste, add sugar and a small spoonful of salt, then add a small spoonful of light soy sauce and stir well.

Pour the fish into the pot and add a small bowl of water just enough to cover the fish.

Bring to a boil over high heat, then reduce to low heat and cover the pot to cook. When the soup becomes less, reduce to high heat to drain out the water.
