Wash the hairtail and cut it into 7~8 cm sections, make a cut on the hairtail, add salt, sugar, cooking wine, pepper powder, high-grade white wine, shredded green onion and ginger, and marinate for 30 minutes;

Pour cooking oil into a pan and sauté the garlic cloves until golden brown, remove and set aside;

Dip the marinated hairtail into the egg liquid;

Fry the garlic cloves fried in the oil in step 2;

After frying both sides of the hairtail until golden brown, add mature vinegar, light soy sauce, fried garlic cloves, shredded onion and ginger from pickling the hairtail, then pour in a little hot water, and cook for 5 minutes until the soup thickens.
