Sauerkraut can be stewed or stir-fried, and it is extremely delicious when used as stuffing. Sauerkraut loves oil, so the oil shuttle has become a golden partner for making sauerkraut stuffing. The biggest advantage of this stuffing is that it is fragrant but not greasy. People eat it over and over again and cannot let it go. My husband is a picky eater and doesn’t really like this filling, so I rarely make it. Chop the sauerkraut and wash it several times to squeeze out the water. If you like the sour taste, wash it a few times less. Cut the pork fat into pieces, use a wok over low heat to force out the oil, and it will become oily shuttlecocks. Then chop it into pieces and add sauerkraut. Cut onions and ginger into small cubes and add them to the filling. Salt, soybean oil, lard, and peppercorns are also added one by one. Stir into filling as shown. Mix two-thirds of the flour with boiling water to make a dough, and mix one-third with cold water to make a dough, then put them together and knead them into a dough. Wake up for a while to make a zygote. (The time is optional, depending on the cooking situation, longer time is better)
