Wash the zucchini and grate it into slightly coarse shreds.

Soak the dried black fungus in cold water and cut into thin strips.

Wash the ginger and cut into fine pieces. 3 slices are enough.

Put an appropriate amount of sunflower oil in the pot (other cooking oils are also acceptable, but it is best not to use rapeseed oil). When the oil is slightly hot, turn to medium to low heat and stir-fry the minced ginger until fragrant.

When the aroma of ginger emerges, first add shredded black fungus and stir-fry for a while; then add shredded zucchini, turn to high heat and stir-fry. After about a minute, add a little salt and chicken essence to taste, stir-fry quickly and then turn off the heat and remove from the pot.
