Pineapple jelly
Overview
This pineapple jelly is entirely a by-product of inverted syrup. I used pineapple to make invert syrup. The boiled pineapple contains a lot of powdered sugar. It tastes like caramelized pineapple, which is pretty good. But I found it too sweet when eaten directly, so I made this pineapple jelly, which became very popular after it was made

Steps
-
Boil pineapple and sugar water for about 2 hours. The sugar water becomes invert syrup, and a lot of the water in the pineapple is boiled out
-
Take out the boiled pineapple. It has less water and more sugar. You can use it to make pineapple flip cakes, but I am too lazy to make cakes on hot days. I feel that it is good to make jelly, which is cool and refreshing. The amount in the ingredients refers to the weight of the cooked pineapple meat
-
Cut pineapple into small pieces

Leave a small part, put the rest into a food processor, add a small amount of water and make a pineapple paste
-
Soak the agar in ice water until soft and put it into the pineapple paste
-
Cook over low heat, stirring constantly, until agar-agar is completely melted, then remove from heat.

Let cool slightly, then pour half of it into the mold, and put the remaining pulp into
-
Pour in the remaining jelly liquid and refrigerate for about 2 hours.

Pour in the remaining jelly liquid and refrigerate for about 2 hours.

After refrigeration, invert it onto a plate and shake it vigorously to remove it from the mold

The prepared pineapple jelly has a very rich pineapple flavor, is ice cold and very smooth.
