Snail Soup
Overview
The creek in my hometown is far away from human habitation. The water quality is excellent. It is clear and sweet all year round. You can see small fish, shrimps and small crabs. These small snails are crawling on the rocks at the bottom of the stream, some are big and some are small, the big one is as big as a thumb, and the small one is as small as a grain of rice. Snails grow in high-quality water sources and are naturally clean. The soup cooked with snails is delicious, slightly bitter, and has heat-clearing and detoxifying properties.

The collected snails are raised in clean water for a day and the sand is spit out.

Clean the snails and pour them into water. Add a spoonful of cooking wine and a few slices of ginger to remove the fishy smell.

After the water boils, turn to low heat and cook for another 2 minutes.

The cooked soup is a beautiful dark green color. The snail soup is light and delicious, with a slight bitter taste.

Drink the soup while it's hot to clear away heat and detoxify. After drinking the soup, you can eat snails and pick out the meat with a toothpick. Or cut off the tail of the snail with scissors before cooking, and you can suck it out directly after cooking. You can also add ginger, garlic, and chili to stir-fry the snails before eating, which will make them more flavorful.
