Old Beijing snack - donkey rolling
Overview
Donkey Rolling is one of the traditional snacks of old Beijing. The finished product has three distinct colors of yellow, white and red, which is really beautiful. Because a layer of soybean flour is sprinkled on its surface, it resembles the loess thrown up by wild donkeys rolling around in the suburbs of old Beijing, hence the name Donkey Rolling. The materials are actually very common. The white one is glutinous rice, the red one is red bean paste, and the yellow one is soybean noodles. Today I used a bread machine to make this traditional snack at home. Regardless of whether it is authentic or not, it is really delicious! Especially the red bean paste stir-fried with rose sauce adds a rich flavor.

Wash the dried soybeans and drain the water

Pour into bread bucket

Select the frying program in the ACA bread machine’s special menu and set the time to 30 minutes

Pour the beans into a bowl and let them cool before using

Pour the cooled soybeans into the food processor cup, start the nut program, and grind them into fine powder

280g glutinous rice and 320g water are ready

Wash the glutinous rice with clean water and put it into the bread barrel with 320 grams of water

Start the rice cake program under the pastry menu. It will take 1 hour and 30 minutes. Let the bread machine make it completely

When the time is up, the glutinous rice and water have completely disappeared, turning into sticky and delicate rice cakes

Spread a layer of soybean flour on the mat

Dip a rolling pin into cold boiling water, roll the cooled glutinous rice balls into large thin slices, and spread an even layer of red bean paste on top

Roll it into a roll. The surface is already covered with a layer of soybean noodles. You can sprinkle another layer to make it more like loess
