Pour water into the water spinach and add an appropriate amount of salt to wash it (tip! It is recommended to soak the water spinach in light salt water for 10 minutes to help soak out trace amounts of residual pesticides)

Heat the pan and add oil until it is 20% hot.

Pour in the washed water spinach and quickly stir-fry over high heat until dark green. Reduce the heat and sprinkle with salt, chicken powder and garlic skin, stir-fry until the flavors are infused, and serve on a plate.
