Overview

Honeycomb cake is a unique cake. When you cut it, you will see densely packed holes, just like honeycomb holes. It has a springy texture, soft, sweet and not greasy, which is very different from other cakes. This kind of cake is very popular in our Guangdong and is common in Cantonese morning tea.

  1. Mix flour and baking soda evenly and set aside.

  2. Dissolve the brown sugar with warm water into brown sugar water, let cool and set aside.

  3. Crack the eggs into a mixing bowl, pour in the condensed milk and mix well

  4. Add honey and mix well, then pour in corn oil and mix well. It must be well emulsified and there will be no oil stars or separation

  7. Pour in the brown sugar water and mix evenly until it becomes watery. It is better to sift it once to remove undissolved brown sugar particles

  8. Cover with plastic wrap and let sit at room temperature for 40 minutes

  9. Line the bottom of the mold with parchment paper to make it easier to unmold. Gently mix the rested cake batter twice, then pour it into the mold until it is 60 to 70% full. Do not pour it too full, as it will overflow during baking

  10. Place the bottom layer of the Dongling K40C oven that has been preheated to 175 degrees and bake for about 30 minutes. The actual baking temperature will depend on the temperament of your own oven. It is recommended that the mold be placed on a baking sheet rather than directly on the grill to prevent the cake batter from overflowing and contaminating the oven.

  11. When baking is complete, take out the cake and place it on a rack to cool. When cut vertically, you can see that the tissues in the upper and lower layers are different. The upper layer is spongy and the lower layer is honeycomb-like. If you cut it crosswise, you can see dense honeycombs. Uneaten honeycomb cake can be stored in the refrigerator and consumed within 3-5 days. You can take it out of the refrigerator and eat it directly, or you can heat it before eating it. Personally, I think the taste will be better after heating.
