For chicken feet bought from the market, first put cold water and a little salt into a basin and let it sit for a while to thaw (short for about half an hour in summer and longer in winter).

After thawing, use scissors to cut off the nails on the chicken feet.

Add cold water to the iron pot and smear the chicken feet, add a little cooking wine, slice the appropriate amount of ginger, and cut the shallots or green onions into sections. Bring to a boil over high heat, skim off the foam, turn to low heat and simmer for about 15 minutes and remove.

Soak in cold water with ice cubes for 10 minutes and drain.
