Chestnut Roast Chicken
Overview

Blanch the chicken, peel the chestnuts, and slice the peppers.

Heat the pan with cold oil, add the ginger slices and stir-fry until fragrant, then add the chicken into the pan and stir-fry.

Add enough water, I added 3 cups at a time, to completely cover the chicken. Add 2 drops of vinegar, cover the pot, bring to a boil over high heat and then reduce to medium to low heat and simmer.

Open the lid and stir-fry halfway to heat evenly. When half of the water is boiled, pour in the chestnuts, add light soy sauce, salt, and dried chili pepper, stir-fry evenly, and continue to cover and simmer.

When the water is almost dry, add green and red pepper slices, reduce the juice over high heat, turn off the heat, cover the pot and continue to simmer for three minutes. (The aroma of green and red peppers will not evaporate and will remain in the chicken. It’s delicious!)
