Prepare broad beans and green onions;

Cut the scallions into thin pieces. It is best to cut the white and green scallions separately;

Add cooking oil to the pot, just a little more than usual. Heat the oil in the pot, add 2/3 of the chopped green onion, and stir-fry over medium-low heat until fragrant. Here I put the white part of the green onions first;

Add broad beans;

Stir fry a few times quickly, then add a little water (or stock), salt and sugar;

Cover and simmer over medium heat for 3 to 5 minutes, depending on the tenderness and quantity of the broad beans. Then sprinkle in the remaining 1/3 of the chopped green onions, mix well and serve.
