Wash the shrimps and cut off the whiskers, open the back and pick out the shrimp lines, add a little salt, cooking wine and pepper, marinate for 20 minutes.

Wash and cut the parsley into sections, cut the onion into thick shreds, shred the onion and ginger, slice the garlic, and cut the coriander into sections.

Cut off the roots of the enoki mushrooms, wash and blanch them in water for about 1 minute, remove and control the water.

Pour cooking oil into the pot and heat it up, add the marinated shrimps and fry them in oil until golden brown and crispy, take them out and set aside.
