Cut eggplant, peppers and tomatoes into cubes

Put oil in the pot

After the oil is hot, fry the eggplant until the skin becomes wrinkled and the surface turns light yellow. Remove and control the oil and set aside

Drain excess oil, add onions and garlic and saute until fragrant

Add eggplant, pepper and tomatoes, stir-fry for a few times, add appropriate amount of salt and soy sauce

Remove from the pot and serve on a plate
