Peel and dice carrots and potatoes. Dice cucumber.

Blanch the diced potatoes in hot water, cool and set aside.

Also blanch the diced carrots in hot water and let cool until set aside.

Mince the garlic.

After the oil in the pot is hot, add the minced garlic and sauté until fragrant.

Add the tripe and stir-fry.

Add salt, sugar, pepper, chicken essence, and chili oil to taste, and stir-fry evenly.
