Beat the eggs, soften the butter and set aside.

Sift in the low flour, stir until there is no dry flour, add dried cranberries, and mix the dough evenly.

Spread a piece of plastic wrap on the work surface and place the dough on the plastic wrap into a long strip. Wrap the dough with plastic wrap, shape it into a cylinder, and place it in the freezer of the refrigerator to harden and set, about half an hour.

Cut the frozen dough into biscuit sheets of the same thickness of 5-7mm, each piece is about two one-yuan coins thick, and should not exceed 10mm in the end.

Bake in 160 degree oven until edges are browned, about 20 minutes. The biscuits will expand slightly after baking. Please ensure that there is a distance of 2cm between each two pieces. If you can't fit them in one tray, you can bake them in multiple trays.
