Clean the eggplants without peeling them, cut them into small pieces and then cut them into strips.

Cut into pieces, add a little salt, and marinate for twenty minutes.

Sauce, two spoons of light soy sauce, one spoon of mature vinegar, one spoon of dark soy sauce, one spoon of oil, and one small spoon of sugar. Add a little water and stir evenly. A pinch of salt.

Wash the eggplant with water to remove part of the salt and dry the water.

Heat oil in a pot and add ingredients.

Heat the oil and fry the chopped green onion and chili until fragrant. Take out the aniseed.

Fry until it changes color, add a little cooking wine and stir-fry.
