Add water to flour and knead into a dough of moderate hardness.

Dissolve the mackerel with water.

Wash and dry the leeks.

Cut the mackerel open in the middle, scrape off the fish meat with a knife and chop it together with the pork filling.

Add onion and ginger and chop into thin mackerel filling.

Add half a spoonful of dark soy sauce, salt and chicken essence and stir.

Finally add some more peanut oil and stir evenly.

Chop the leeks and add to the stuffing, stir evenly, and the stuffing is ready.

Divide the dough into small pieces and roll into a round shape.
