Overview

The rice must be cold, not freshly cooked, or too soft, otherwise it will become sticky when fried. The carotene contained in carrots is fat-soluble, not easily soluble in water but easily soluble in oil, so the carrots are the first to be fried, which is more conducive to the dissolution of the carotene!
