I don’t know how many people crossed the river with their trousers rolled up to eat this dish when they were young. Anyway, I often did this when I was a child. There was a small river near my home at that time, and there were many snails in the river. In the summer, I often made appointments with my friends to go down to the river to touch the snails. After a while, you can find a small basin full of it, then take it home and soak it in water for a day. You have to change the water several times in the middle to let the snails spit out all the dirt in the body. Then you use a needle to pick out the snail meat one by one, wash it, and let your mother fry it. It looks like a lot in a small pot. The shells are removed and only the meat is left, which is enough to stir-fry a plate of vegetables. It also needs to be fried with home-grown chili peppers to make it fragrant. Now that I think about it, I also have the potential to be a foodie. At that young age, I could actually sit on a small bench and pick out snail meat with a needle for a long time just to have a meal of it. Now the river in my hometown has dried up for many years, and children no longer have the opportunity to go down to the river to touch snails. Even if there is a river, grandparents do not dare to let their children near the river. Although many stalls in summer night markets sell fried snails, I never dare to eat them if I don’t make them myself. Because it is very clear that this thing must be carefully cleaned before it is safe to eat, the sellers at the stalls are always a little worried. I have not seen anyone selling raw snails in the market, so I have not eaten it in these years. This time when my mother-in-law came from her hometown, she actually brought a package of frozen snail meat. It was so rare that she quickly defrosted, cleaned and cooked it.   1. The snail meat is ready. My snail meat is frozen and needs to be defrosted at room temperature in advance;

  2. Put the snail meat in a small basin, add some water to wet it, then add salt and rub it for a while, then wash it with clean water and clean all the dirt on the snail meat. This step requires some patience and you have to wash it one by one;

  3. The cleaned snail meat is ready for later use;

  4. Boil water in a pot. After the water boils, pour the snail meat in and cook for about 1 minute;

  5. Take out the cooked snail meat, rinse it with warm water, drain and set aside;

  6. Peel the garlic, remove the stems of the green peppers, and peel the carrots; because my family can’t eat spicy food, I chose green peppers that are not too spicy, with a lot of garlic. If you like spicy food, you can add some dried red peppers or replace the green peppers with spicy ones;

  7. Cut the green peppers, carrots, and garlic separately; also cut the scallions into finely chopped green onions. I forgot to take a photo;

  8. Heat the wok, add oil, add garlic slices and chopped green onions and stir-fry until fragrant, then add carrots and stir-fry;

  9. Put the snail meat in, stir-fry quickly over high heat;

  10. Pour in an appropriate amount of light soy sauce and a little white wine, and continue to stir-fry over high heat; you can also add cooking wine or rice wine, because I don’t have these two at home, so I poured some white wine in;

  11. Add the chopped green peppers, season with some salt, and continue to stir-fry a few times;

  12. This dish is ready. Turn off the heat, take it out and serve on a plate.

  13. I haven’t had this dish in many years. After steaming a pot of rice, this dish is super delicious. Although the dish I fried is not spicy, it has a very good taste. Adding a lot of garlic can also stimulate the taste buds.
