Three Cup Chicken
Overview
I remember when I was little, every time I ate, what I looked forward to the most was the three-cup chicken made by my mother on the table. Sometimes it was chicken legs, sometimes it was chicken wings, sometimes it was chicken nuggets. The only thing that remains unchanged is the taste of sweet and salty, salty and fresh. Now that I have grown up, I have also learned my mother’s good cooking skills. Although the taste is not as good as my mother’s, it is enough to satisfy my cravings. The essence of the three-cup chicken made by my mother is one cup of sugar, one cup of wine, and one cup of soy sauce. Hence the name three-cup chicken. All the old-fashioned seasonings are used. And my own method and dosage are slightly adjusted according to the types of seasonings at home.

Clean a few chicken legs.

Cut into large pieces.

Slice ginger.

Cut the shallot into sections and slice the garlic.

Put oil in the pot and sauté onion, ginger and garlic.

Add chicken legs and stir-fry.

Stir-fry until all colors change.

Add 3 tablespoons of onion and ginger cooking wine.

Add a spoonful of dark soy sauce and stir-fry until it turns colour.

Add two tablespoons of sugar.

Add appropriate amount of water and simmer.

Simmer until 1/3 of the soup remains, shaking occasionally.

When the sauce is almost gone, stir quickly to coat each piece of chicken with the sauce.
