Overview
The fat content of pig skin is only 1/2 of pork, the protein content is 2.5 times that of pork, and more than 90% is macromolecular collagen and elastin. Collagen has a special nutritional effect on the skin and can promote skin cells to absorb and store water. Elastin increases the elasticity and toughness of the skin, promotes strong blood circulation, provides sufficient nutrition, and softens wrinkles. Wash the fresh meat skin.

Put it into a pot of cold water, boil it for 3 minutes, take it out and wash it.

Use a small clip to carefully remove the remaining pig hair on the surface.

Use a knife to scrape off the fat on the surface of the meat skin and then rinse with water. (This step is very important)

Prepare star anise, bay leaves, cinnamon, chili, Sichuan peppercorns, ginger and other spices

Cut the washed pork skin into thin strips, put it into a pressure cooker, add spice balls, ginger, cinnamon, appropriate amount of sugar, salt, cooking wine, and light soy sauce.

Add about three times the amount of water to the pork skin, cover, bring to a boil over high heat, then turn to low heat, and simmer for 30 minutes.

After cooling, pour the meat skin and soup into a crisper and put it in the refrigerator.

Take out the frozen meat skin and cut it into pieces. You can eat it directly, or you can prepare the sauce according to your personal taste for a better flavor.
